PROBLEM TO BE SOLVED: To produce Candida utilis containing a high content of γ-glutamylcysteine and to produce a food containing glutathione, γ-glutamylcysteine, cysteine or cystenylglycine using the same. A Candida utilis modified with a gene encoding glutathione synthase is cultured under suitable conditions, and the resulting culture or a fraction thereof, or the culture or fraction obtained by heat treatment. Are mixed with food and drink raw materials and processed into food and drink products to produce γ-glutamylcysteine, cysteine or cystenylglycine-containing foods. [Selection figure] None |
