abstract | PROBLEM TO BE SOLVED: To provide a method for producing a highly unsaturated fatty acid calcium salt. SOLUTION: (a) Essentially (i) 50-95% by weight of unsaturated C16-C22 fatty acid, (ii) 5-40% by weight of saturated C14-C22 fatty acid, and (iii) 6% by weight or less. A step of providing an unsaturated fatty acid raw material comprising 20% by weight or less in the form of glycerides, and (b) 1.0 to 2.5 equivalents of the raw material. (C) adding 2 to 5 equivalents of water to the reaction mixture, and the calcium oxide is hydrated to neutralize the fatty acid to form a calcium salt. And when adding less than 1.75 equivalents of calcium oxide, the raw material contains at least 25% by weight of saturated fatty acids, and the raw material is heated to a temperature above the melting point prior to the calcium oxide addition step.
