PROBLEM TO BE SOLVED: To provide a fermented composition of a pepper- or capsinoid-containing plant that can be used safely as food, medicine, etc., has less hotness and irritation of capsaicinoid, and can enhance vitamins and amino acids. The fermented composition contains a fermented product obtained by fermenting a plant containing capsicum or capsinoid or an extract thereof. When using a red pepper as a raw material, it is more preferable that it is a non-spicy variety, and it is especially preferable that it is CH-19 sweet of a fixed non-spicy variety. This fermented composition is preferably used as one raw material selected from foods, pharmaceuticals, quasi drugs, and cosmetics. [Selection figure] None |
