abstract The present invention relates to ginsenoside glucosidase that hydrolyzes ginsenoside present in a high content in ginseng to prepare rare ginsenoside with high bioactivity. The ginsenoside glucosidase is obtained from cultures of microorganisms, ginseng plants, almonds, wheat bran, malt, animal liver, etc., and has four types depending on its ability to hydrolyze the sugar group of ginsenoside, namely, ginsenoside glucosidase I, ginsenoside. It is classified into glucosidase II, ginsenoside glucosidase III and ginsenoside-α-rhamnosidase. The invention also relates to the use of said ginsenoside glucosidase in the preparation of rare ginsenoside.
