abstract An object of the present invention is to improve the lightness and the like peculiar to monoglycerin fatty acid ester, and not only to exhibit a good flavor with a sense of unity, but also to have excellent familiarity with the material, good texture, appearance, workability, and emulsifying property. Provision of a fat or oil composition. The following (A), (B) and (C): (A) Monoglycerin mono-fatty acid ester of 0.1 to 10% by weight, monoglycerin tri-fatty acid ester of 1 to 64.9% by weight, and monoglycerin diester having an unsaturated fatty acid content of 80 to 100% by weight in constituent fatty acids. Fats and oils containing 35 to 98.9% by weight of fatty acid ester 100 parts by weight (B) Diglycerin fatty acid ester containing 40 to 100% of a difatty acid ester whose unsaturated fatty acid content in the constituent fatty acids is 70 to 100% by weight 0 0.1 to 3.0 parts by weight (C) Antioxidant An oil or fat composition containing 0.01 to 2 parts by weight.
