An object of the present invention is to analyze the structure of a red algae starch and to isolate and identify its synthase. Red algae starch has a unique structure that is different from other organisms.Not only is it itself useful as a novel starch for food and industrial use, but its synthase is a starch with a novel structure. It is useful as an enzyme for producing. The present invention relates to an isoamylase derived from Porphyridium, a kind of red algae.
