abstract |
An object of the present invention is to provide a method for efficiently producing a highly unsaturated fatty acid-containing diglyceride having a high DHA ratio and a high diglyceride concentration. SOLUTION: A highly unsaturated fatty acid-containing partial glyceride is reacted with a highly unsaturated fatty acid-containing oil and fat in the presence of a catalyst and in the absence of water by causing glycerol to react with the resulting highly unsaturated fatty acid-containing partial glyceride and a fatty acid or a lower fatty acid thereof. A method for producing a highly unsaturated fatty acid-containing diglyceride, which comprises reacting an alkyl ester with an immobilized partial glyceride lipase. [Selection diagram] None |
