abstract SOLUTION: The antifreeze protein derived from a microorganism known to prevent recrystallization of ice during cryopreservation or thawing and to reduce the freezing temperature of water is a genus of Flavobacterium. The present invention provides a microorganism-derived antifreeze protein having high thermal hysteresis activity and a method for producing the same by using a microorganism containing the same. According to the present invention, an antifreeze protein derived from a low-temperature microorganism having a thermal hysteresis activity of 0.5 ° C. or more can be provided. Compared to antifreeze proteins derived from plants, fish and microorganisms known so far, they have higher thermohysteresis activity and can be used in various industrial fields.
