abstract | [PROBLEMS] In a forward reaction using acetaldehyde as a reaction substrate, the presence of a reaction product after an Amadori rearrangement reaction has not been confirmed, and the production method is unknown. The product is required for elucidation of the etiology, diagnosis and treatment of various diseases caused by advancing reaction products. The reaction product is obtained by a reaction system in which an organic compound existing in a living body and a low-molecular aldehyde having an aldehyde group and having a total number of carbon atoms of 2 or less are mixed, and is a reaction product after an Amadori rearrangement reaction.
