abstract An object of the present invention is to provide a method for producing a processed seafood product in a sealed container having a good flavor and texture without a raw odor or a can odor. A raw or pre-treated fish and shellfish and a seasoning liquid containing a water extract obtained from a tea material are sealed in a sealable container, and then heat-sterilized. As the tea material, it is preferable to use a fermented tea material obtained by post-fermenting one or more kinds selected from green teas, Chinese teas, black teas, and barley tea. It is preferable to use an aged tea material obtained by mixing and aging alcoholic beverages and acid-fermented milk. [Selection diagram] None
