5-O-α-D-glucopyranosyl-L-ascorbic acid and 6-O-α-D-glucopyranosyl-L-ascorbic acid are not produced or their production is so small that they cannot be detected. The present invention provides a method for reacting -D-glucopyranosyl-L-ascorbic acid and a method for producing 2-O-α-D-glucopyranosyl-L-ascorbic acid using this reaction method. A solution containing L-ascorbic acid and an α-glucosyl sugar compound is mixed with α-isomaltosylglucosaccharide-forming enzyme or α-isomaltosylglucosaccharide-forming enzyme and cyclomaltodextrin / glucano. 2-O-α-D-, characterized by reacting with transferase (EC 2.4.1.19) to produce 2-O-α-D-glucopyranosyl-L-ascorbic acid and collecting it The problem is solved by providing a method for producing glucopyranosyl-L-ascorbic acid.
