PROBLEM TO BE SOLVED: To provide a novel bacteriocin which is derived from lactic acid bacteria, is easily degraded in the human body, has high selectivity for inhibiting microorganisms, and is considered to be highly safe. And to provide a strain producing the same, a gene thereof, a gene involved in the strain, and a use of the bacteriocin and the strain for food. SOLUTION: A novel lactic acid bacterium Enterococcus munditi 7393 was isolated using the antibacterial activity against Enterococcus faecium as an index, and a novel bacteriocin, munditicin KS was isolated from the strain. Furthermore, a novel bacteriocin gene, its resistance gene, and its extracellular excretion gene were cloned from the genomic gene of the strain. The novel bacteriocin, Munditicin KS and Enterococcus munditi 7393 were used for the production of a conservative food. |
