(57) [Abstract] (Correction) [Problem] Chitin or β-poly-N-in chitin raw material A means for decomposing acetyl-D-glucosamine to efficiently produce at least chitin oligosaccharide is provided. A β-N-acetylglucosaminidase gene having a specific base sequence. Gene equivalent in function to this. Β-N-acetylglucosaminidase having an amino acid sequence encoded by these genes. An enzyme with the same function as this. A method for producing an enzyme, comprising culturing a Clostridium paraputrificum M strain or a recombinant into which the above gene has been introduced, and obtaining the above enzyme from the culture. A method for producing a chitin oligosaccharide in which at least chitin oligosaccharide is produced by allowing these enzymes to act on chitin or chitin. |
