abstract (57) [Summary] [Problem] To provide a purification method using an astaxanthin ester to obtain a free form of astaxanthin in a form usable for food in a high yield. A chicken is fed with a feed containing astaxanthins. A free astaxanthin produced from the astaxanthins by metabolism in the chicken body is accumulated in the egg yolk of chicken eggs. The astaxanthin free form is extracted from the egg yolk and purified. The astaxanthin is an astaxanthin ester or a chemically synthesized astaxanthin free form.
