abstract PROBLEM TO BE SOLVED: To provide an N-bishydroxyalkylamino acid having an excellent chelate performance and biodegradability, which makes it possible to obtain a target compound in a high yield and a high purity with a reduced amount of impurities. A method of manufacturing is provided. SOLUTION: The method for producing an N-bishydroxyalkyl amino acid includes a step of adding an alkylene oxide to an amino acid, wherein the alkylene oxide adding step has a carboxylic acid neutralization degree of the amino acid of 50 or less. And the amount (molar ratio) of the alkylene oxide to the amino acids is 1.8 to 3. A method for producing N-bishydroxyalkyl amino acids, wherein the reaction is carried out as 0.
