abstract | (57) [Problem] To provide a thermostable cysteine synthase capable of efficiently performing an amino acid synthesis reaction, a DNA encoding the enzyme, and the like. A cysteine synthase was isolated from a hyperthermophilic archaeon Aeropyrum pernix capable of growing at a high temperature of 90-100 ° C, and its amino acid sequence and DNA sequence were determined. This enzyme is a cysteine synthase whose activity does not substantially decrease when heat-treated at 80 ° C. for 6 hours. Since the enzyme has such high heat resistance, a high-concentration substrate solution can be prepared at a high temperature, and as a result, amino acids and the like can be efficiently produced. |
