abstract PROBLEM TO BE SOLVED: To provide a novel taste improver having an effect of improving taste, such as a savory taste, while maintaining the salty taste of a potassium-containing food or drink without lowering it. SOLUTION: A taste-improving agent for potassium-containing food and drink, comprising pea and / or an extract thereof. The pea used is the grain of the annual herb of the genus Pea (Pisum sativum), and includes the grain as it is or a processed product thereof. The extract of peas is not particularly limited as long as it is extracted from peas, and examples of the extraction method include a hot water extraction method and an organic solvent (eg, ethanol) extraction method. If necessary, an appropriate treatment such as enzymatic decomposition, concentration, decolorization, deodorization, and drying may be performed.
