abstract | (57) [Summary] [PROBLEMS] To produce a high-quality compost that does not harm plants when applied to green farmland with a shorter fermentation period than conventional methods, that is, has high application safety. In addition, the present invention provides a fermentation treatment method capable of reducing the size of fermenters and facilities and further reducing operating costs. SOLUTION: This is a method for fermenting a mixture of organic waste and peach grass, wherein the first fermentation step 2 is performed in which the number of fermentation days is 3 to 10 days, and the total amount of the obtained processed material is reduced by the number of fermentation days. Is transferred to the second fermentation step 3 for 3 to 10 days, and the entire amount of the obtained processed product is transferred to the third fermentation step 4 in which the number of fermentation days is 30 days or less.
