abstract PROBLEM TO BE SOLVED: To provide a method for producing stevia extract which is improved in quality, simple in production and capable of reducing production cost. SOLUTION: Stevia stalks from which stevia leaves have been removed are dried to obtain a powder, which is boiled in a state of being pressurized to an atmospheric pressure or higher, and then a solid is removed to obtain an extract. Next, this extract is heated and concentrated under reduced pressure. The concentrated extract is subjected to primary fermentation by a fermenter, and the primary fermented concentrate is fermented and aged for 30 to 360 days to obtain a stevia extract. When the concentrate is removed, it is scooped out with a net of about 50 mesh. Also, Removes impurities generated during fermentation and aging.
