PROBLEM TO BE SOLVED: To provide a method for manipulating a flavor of chocolate crumb, comprising processing one or more crumb components to enhance flavor and produce crumb. The aim is to enhance the flavor of SOLUTION: One or more crumb components are treated with a protease or with a milk or protein hydrolyzate to enhance flavor by changing the component time, reaction temperature, or moisture content during crumb production. [Effect] By adding chocolate crumbs with enhanced flavor to milk chocolate and white chocolate, a product with enhanced flavor can be obtained. |
