abstract | (57) [Summary] [Problem] When bread is manufactured using rice flour, it is used together with gluten in order to increase the volume of the product, but the compatibility between rice flour and gluten is very poor. There were problems such as poor pot growth, no volume after firing, poor flavor and texture. For this reason, it is difficult to use rice flour as a complete substitute for flour. Conventionally, only a small amount of rice flour has been used by mixing it with flour. An object of the present invention is to provide a bread dough from which rice flour can be used in place of wheat flour to obtain bread excellent in volume and texture. SOLUTION: The bread dough of the present invention is a bread dough containing rice flour for bread and a starch having a gelatinization start temperature of 52 to 60 ° C, wherein the starch having a gelatinization start temperature of 52 to 60 ° C is contained in the bread dough. And 1 to 30% by weight of the rice flour for bread. |
