abstract PROBLEM TO BE SOLVED: To provide an antifungal jam which can be stored for a long period of time at room temperature without using a synthetic storage amount and having a low sugar content. SOLUTION: The antifungal jam contains cinamic aldehyde as an antifungal agent. The content of cinnamaldehyde is at least 20 ppm. The sugar content of the antifungal jam is preferably 60% or less. In addition, the fungicide for food containing cinnamic aldehyde as an active ingredient can be applied to fungicides for various foods such as processed meats, processed fish, and processed seeds as well as jams.
