abstract (57) [Object] The object of the present invention is to provide a preservative by lowering the pH, and to provide a wide range of gels or pastes that have little or no acidity despite the low pH. It is an object of the present invention to provide a paste-like oil-in-water emulsion which can be prepared into a food in the form of a gel and a food in the form of a gel or a paste using the emulsion. The present invention relates to a paste which has an acidity in the range of 0.05 to 0.6 and a pH of 3.0 to 5.0 and has little or no acidity. And a gel or paste food such as mousse, bavarois, pudding and the like using the paste-like oil-in-water emulsion.
