abstract (57) Abstract: The following components (A) and (B): (A) fats and oils containing 50% by weight or more of diglyceride, (B) It contains an emulsifier, the weight ratio (A) / (B) of the components (A) and (B) is 25/1 to 5/1, and the average particle size of the oil droplets is 0.07 to 0. An emulsified food which is an emulsion having a particle size of 2 μm and contains at least 0.1% by weight or more of the component (A). [Effect] The emulsified food of the present invention has excellent long-term emulsification stability and good flavor, and is particularly preferable as a packaged emulsified beverage.
