abstract | (57) [Problem] To provide a method for easily, safely, and efficiently producing cinnamic acid esters. SOLUTION: Cinnamic acid esters are produced by subjecting an ester of cinnamic acid and quinic acid or saccharide to an enzymatic transesterification reaction in an aqueous alcohol solution. Examples of cinnamic acids include cinnamic acid, hydroxycinnamic acid, caffeic acid, Ferulic acid and the like. Examples of sugars include hexose, pentose or oligosaccharides having these components, Polysaccharides. Examples of aqueous alcohol solutions include: Examples include aqueous solutions of methanol, ethanol, propanol, isopropanol, n-butanol, phenylethyl alcohol and the like. As the enzyme, tannase, chlorogenic acid esterase, ferulic acid esterase and the like are used. By using the transesterification reaction, cinnamic esters having excellent actions such as anti-inflammatory and anti-cancer can be easily produced. |
