(57) [Summary] [PROBLEMS] To provide a technique for preventing the generation of blue odor peculiar to soybean as much as possible and enabling the use of soybean for a wide range of uses. A method for treating soybeans in which soybeans in which lipoxygenase has been inactivated are obtained by immersing soybeans in hot water for several minutes or longer without being immersed in water or by holding them in hot steam for several minutes or more. |
