abstract (57) [Problem] To provide a powdery soybean protein capable of imparting favorable water retention and hardness to processed meat products such as ham. SOLUTION: A powdery soybean protein having a 5% aqueous solution pH of 8.0 to 10.0, an additive for a processed meat product containing the powdered soybean protein, and a processed meat product containing the powdered soybean protein Manufacturing method. An organic acid salt may be contained in the powdery soybean protein. Further, when the powdery soybean protein is used and transglutaminase is used in producing a meat product, the effect is further enhanced. By using the powdery soybean protein, a processed meat product having improved quality such as water retention and product strength can be obtained. Its function is equivalent to that of polymerized phosphate.
