abstract | (57) [Abstract] A method for producing cold-leached leaf tea. Green tea leaves are wilted, treated with tannase, and in the presence of hydrogen peroxide in an amount sufficient to activate endogenous peroxidase to oxidize gallic acid and other compounds released by the tannase treatment. Fermented and then dried. The end product is black tea leaves that are leached in hot or cold water to produce good flavor and color. |
