Beverage production using peroxyacid antimicrobial composition and low-temperature aseptic bottling |
abstract |
(57) Abstract: In beverage processing, C 1 -C 4 peroxycarboxylic acid or C 6 -C 18 C 1 -C 4 peroxyacid antimicrobial concentrate comprising a peroxycarboxylic acid and using compositions in combination with peroxyacid to provide Is done. The combination of these materials provides a synergistic effect and provides more potent biocidal activity than when these components are used alone. Other components such as hydrotrope binders, stabilizers and the like may be added to the composition. Effective antimicrobial use solutions are formed at low concentrations by diluting the concentrate with water to a pH of about 2-8. One use of this composition is the disinfection of substantially fixed "in-situ" processing lines in dairy, breweries, and other food and beverage processing. Another use is in processes involving aseptic cryogenic filling of beverage containers such as cans, glass bottles or 2 liter PET bottles. |
