(57) [Summary]nThe present invention relates to a stable, preferably aqueous, food cleaning composition, preferably for use on produce and / or food contact surfaces. The composition typically comprises from about 0.1% to about 20%, by weight of the composition, of a solubilized, water-soluble, uncomplexed cyclodextrin, and (1) a cyclodextrin-compatible surfactant, (2) A cyclodextrin-compatible antimicrobial active agent and (3) at least one component effective to improve the performance of the composition, selected from the group consisting of mixtures thereof. Optional hydrophilic fragrances improve acceptability. Optionally, the composition can contain low molecular weight polyols, metal salts to help odor control, and the like. The composition is preferably essentially free of non-food compatible substances. The composition is preferably applied as small sized droplets, especially from a spray container. The surfactant / antimicrobial active agent combination exerts improved antimicrobial activity. |
