(57) [Summary] A phosphopeptide containing the Ser (P) cluster sequence motif Ser (P) -Ser (P) -Ser (P) -Glu-Glu- is an amorphous calcium phosphate [Ca 3 (PO 4 ) 1.87 ( HPPO 4 ) 0.2 x H 2 O] and the weight of amorphous calcium fluoride phosphate (ACFP) [Ca 8 (PO 4 ) 5 FxH 2 O)] itself. Amorphous phases stabilized with phosphopeptides are excellent mediators supplying Ca, F and phosphate to the tooth surface in a slow release amorphous form that produces excellent cariogenicity. The amorphous phase stabilized with these phosphopeptides is useful as a dietary supplement to increase the bioavailability of calcium and helps prevent diseases associated with calcium deficiency. |
