abstract (57) [Summary] An object of the present invention is to provide an indicator substance for clarifying the freshness of royal jelly. SOLUTION: With respect to royal jelly blended in health foods and the like, it is desired to formulate an index of freshness which is a standard of the degree of effectiveness and its own deterioration for each lot. A protein of 350 kilodalton is used as an indicator of freshness, and its molecular weight is about 35. The index of freshness is defined as the ratio of 0 kilodalton protein to the total protein in royal jelly being 35% by weight or more.
