(57) Abstract: The present invention relates to a method for producing a mushroom lactic acid fermentation liquor and a mushroom lactic acid fermentation liquor produced therefrom, and more particularly, to a step of inoculating a strain of lactic acid bacteria into a mushroom component-containing medium and performing lactic acid fermentation. The present invention relates to a method for producing a mushroom lactic acid fermentation solution which is excellent in taste and palatability, is useful for suppressing lipid peroxide production and lowering blood sugar, and a mushroom lactic acid fermentation solution produced therefrom. SOLUTION: (a) a step of preparing a medium containing a mushroom component; (b) inoculating a strain of a lactic acid bacterium into the medium containing a mushroom component; and (c) culturing the strain of the inoculated lactic acid bacterium. And (d) aging a strain of lactic acid bacteria cultured in the mushroom component-containing medium. |
