abstract PROBLEM TO BE SOLVED: To provide a method for producing casein as raw material, which can provide casein peptone with improved microorganism growth performance as compared with a conventional method. SOLUTION: A casein curd which is coagulated and precipitated by acidifying skim milk is obtained, and the casein curd is washed with water. A method for producing a casein raw material, comprising a step of obtaining a casein material by purifying it by a dehydration treatment, wherein a water-soluble component separated by the washing and dehydration treatment is added to the casein raw material.
