titleOfInvention | New yeast, method for producing fermented seasoning, and bioreactor |
abstract | PROBLEM TO BE SOLVED: To provide a novel yeast belonging to the genus Tigosaccharomyces which has a cell mass forming ability and can be fermented with high efficiency even in a medium having a high salt concentration, and a fermented seasoning using the yeast strain It is an object of the present invention to provide a novel yeast having a high osmotic pressure resistance without using an immobilized carrier and a method for producing a fermented seasoning using the same, with respect to a method for producing the same and a fluidized bed type bioreactor. Another object of the present invention is to provide a bioreactor having a relatively simple structure and capable of performing processes such as continuous fermentation. SOLUTION: Zygosaccharomyce having a cell mass forming ability (including agglutinating ability and adhesive ability) s) (No. 18252 [FERM P-18252]). |
