abstract [PROBLEMS] To provide a method for stably storing an aqueous solution of an optically active tartrate produced by a microbial reaction. A pH of an optically active tartrate aqueous solution is adjusted to 6.0 or less. Specifically, the pH of an aqueous solution of D-tartrate obtained by culturing a microorganism of the genus Pseudomonas in a solution of DL-tartaric acid is adjusted to 6.0 or less to suppress degradation and store the solution stably.
