abstract | (57) [Summary] [Problem] An undiluted solution of apple fiber having a novel constitution, which relates to the effective use of apple fiber and efficiently elutes water-soluble component pectin from powdered apple fiber. And a method for producing a modified pectin powder using the undiluted apple fiber obtained by the method, and a drink using the undiluted apple fiber. SOLUTION: Apple fiber is simmered for a predetermined time, the obtained simmered liquid is filtered, stored in a tank, allowed to stand still, and insoluble contaminants and the like in the liquid are allowed to settle, and then the supernatant is collected, and 100 ml of aqueous solution is collected. -A method for producing an undiluted apple fiber solution in which an aqueous solution containing about 1.0 g or more of water-soluble apple fiber pectin is produced. |
