SOLUTION: Gluten is enzymatically hydrolyzed by using one or more proteases to obtain a hydrolyzate; the hydrolyzate is acidified to pH 4 to 5; A method for producing a glutamine-rich gluten-free peptide preparation from a gluten protein, comprising the step of obtaining a glutamine-rich gluten-free peptide. The protease is preferably a neutral or basic protease and the optimal pH for acidification is between 4.5 and 4.5. 4.7.
