(57) [Problem] To provide an optically active aminofuranone and hydroxyfuranone which are enriched in one enantiomer in a high yield and without racemization. SOLUTION: One enantiomer-rich cyanohydrin is acylated with an acylating agent and then cyclized at 40-90 ° C in the presence of zinc or a zinc compound to give one enantiomer-rich corresponding amino acid. A process for preparing one enantiomer-rich aminofuranone and hydroxyfuranone, which is converted to the corresponding enantiomer-rich hydroxyfuranone, which is furanone, and optionally by acid hydrolysis, if necessary. |
