(57) [Summary] (Modifications) [Problem] A soybean useful as a medicine or a food or drink type for prevention and treatment of blood cholesterol elevation for the purpose of safely and efficiently reducing blood cholesterol concentration Provision of protein components. SOLUTION: A composition for reducing blood cholesterol, comprising as an active ingredient low phytate soybean protein containing 11S globulin as a main component. In the above composition, 11S globulin is contained at 70% or more per protein, and the phytin content is 0.2% or less per protein. The composition for reducing blood cholesterol is prepared from soybean containing 11S globulin at 60% or more of the total protein content in seeds, and is obtained by allowing phytic acid degrading enzyme to act on soybean protein.
