(57) [Summary] (with correction) [PROBLEMS] To provide a method for reducing or removing cholesterol in foods using lactic acid bacteria. SOLUTION: A lactic acid bacterium belonging to the genus Lactococcus, Lactococcus lactis subsp. Lactis (Lactococcus lactis subs). p. lactis) is admixed with the diet during or immediately after ingestion or in advance to adsorb cholesterol in the food and reduce or remove cholesterol. Specifically, the lactic acid bacterium is cultured in advance by an ordinary method under anaerobic conditions, and preferably, viable cells are used. |
