abstract (57) [Problem] To provide a novel reducible concentrated extract having storage stability at ordinary temperature and a method for producing the same. SOLUTION: A raw material containing at least an edible portion is used as a raw material, the following processing steps: a step of rapidly extracting with hot water under slight pressure; An extract comprising a step of continuously concentrating, a step of appropriately pretreating a concentrated liquid to remove bacteria in a membrane at a low temperature, and a step of aseptically filling the concentrated liquid at room temperature, and a method for producing the extract.
