abstract (57) [Summary]nN-alkyl polyhydroxyalkylamines, such as N-methylglucamine, having a Gardner chromaticity of less than 1 are converted to aliphatic, such as methyl esters, anhydrides and / or fatty acids having a transmission at 460 nm of more than 98%. Reaction with a source of the acyl group in an organic hydroxy solvent such as methanol produces amides of N-alkyl polyhydroxyamines with good color. The N-alkyl polyhydroxyamine can be purified by crystallization and / or by treatment with a reducing bleach to give excellent color. The reaction is preferably carried out at low temperature and for a short period of time with low catalyst concentration to minimize the formation of cyclic products. The resulting amide product can be further purified by treatment with an anion and cation exchange resin to remove soap and amine impurities. The anionic ion exchange resin can be easily regenerated by oxidizing and then washing with an organic solvent.
