abstract (57) [Summary]nThe present invention relates to soft drinks, concentrates and syrups that are sweetened with a dipeptide sweetener and contain fructosyl saccharide. The fructosyl saccharide therein is a fructan, the fructosyl units are mainly linked by β-2,1 bonds, the chain length ranges from 3 to 100 units, and the mode and average chain length are at least each. If it is 4.75 and the pH of the products is between 2.5 and 4.0, the sweetness of these products will be kept longer during storage. The present invention also relates to the addition of a fructosyl saccharide having the above-mentioned characteristics before storing the product and adjusting the pH to 2.5 to 4 to thereby soften soft drinks, concentrates and syrups that have been imparted with a dipeptide sweetener. It also relates to a method of maintaining sweetness during storage.
