(57) Abstract: The present invention relates to a filamentous fungus, Absidiah corymbifera. Primary sequence of a structural gene encoding α-galactosidase produced by IFO8084 strain (hereinafter abbreviated as 8084 strain), construction of an expression plasmid vector incorporating the present enzyme gene as a foreign gene, production of α-galactosidase by a transformant thereof Expression and use of the expressed enzyme. According to the present invention, the α-galactosidase gene cloned from the chromosomal DNA of the 8084 strain is a novel gene. Since galactosidase can be expressed, it has become possible to efficiently produce the expressed enzyme. Since this enzyme synthesizes raffinose from sucrose and galactose, it has become possible to mass-produce raffinose by using an expressed enzyme. |
