abstract (57) [Problem] To provide a method for producing a sucrose fatty acid ester-dispersing oil / fat composition in which sucrose fatty acid ester having high safety and various functions is stably dispersed in oil / fat. A heated oil or fat has an average ester substitution degree of 2 to 3. After partially dissolving by adding sucrose saturated fatty acid ester, the obtained mixture is cooled.
