abstract |
PROBLEM TO BE SOLVED: To provide a sorbitol dehydrogenase excellent in substrate affinity and substrate specificity, a microorganism producing the same, and a method for producing the same. A sorbitol dehydrogenase having the following physicochemical properties. (1) Action: D-sorbitol is oxidized dehydrogenatively in the presence of NAD + to produce D-fructose. Also, By a reverse reaction of this reaction, D-fructose is reduced in the presence of NADH to produce D-sorbitol and NAD + . (2) Substrate specificity: Vmax / K for D-sorbitol Vma for galactitol when m is 100 x / Km is about 37 or less and Vmax / L-iditol Km is about 3 or less and does not react with D-arabitol, D-mannitol, xylitol, and D-glucose. (3) Km for sorbitol: 5.9 mM or less. |
