abstract (57) [Problem] To provide a method for producing a frozen radish grated in which yellowing is prevented and a product thereof. SOLUTION: A raw radish is heated before a crushing step, crushed, crushed with an acid, and frozen. After processing, crushed, acetic acid is added and frozen. EFFECTS The frozen grated radish obtained by the present invention is useful as a raw material for sour foods, for example, dressings and ponzu vinegar, and particularly as a storage raw material for use in industrially producing them.
