abstract (57) [Summary] [Problem] To provide a meat meat quality improving agent capable of producing a soft and juicy processed meat meat product with good yield, a method of producing a processed meat food using the same, and a processed meat food obtained. SOLUTION: The quality improving agent for beef meat, which contains a swelling agent and dietary fiber, or the like and a gluconate as active ingredients, is 0.1 to 3% by weight based on the livestock meat material. A method for producing processed meat meat, comprising adding an amount of the above meat quality improving agent to a meat material or immersing the meat material in a pickle liquid containing the meat quality improving agent at a concentration of 0.1 to 10% by weight. And a processed meat food obtained by the method.
