(57) [Summary]nMethods for modifying the chain length and double bond position specificity of the soluble plant fatty acid desaturase are disclosed. More specifically, the method comprises modifying an amino acid contacting residue in the substrate binding channel of the soluble fatty acid desaturase that contacts the fatty acid. In particular, modifications of the acyl-ACP desaturase are disclosed. Amino acid contact residues within the substrate binding channel are identified and subsequently substituted with various residues to alter the activity. |
